2016.1.6 | 火井 fo tseng (or fire well), shek tong tsui
first of all the english name here is my translation. tried to research for the official name but couldn’t find one in english.
this noodle maker is in my neighbourhood, at whitty street no. 18. i feel the need to write about tim kee because sai wan (western district) has long “transformed”, many of our community old friends have gone due to rapid “development” under the mtr effect, and luckily (finger crossed) our tim is still steaming.
done some research and found that tim started in shek tong tsui back in the 60s of the last century. it moved to the current location in the 80s. so this space has a history of almost 30 year.
tim major in cantonese style noodle making/wholesaling but it also has its door opened for residents around to buy its products in retail.
every time when i walk pass this big square window during day time and see the fluorescent light shines bright white i feel assured, my neighbourhood is still there. this big square features many beautiful images of hard labouring of food making, the hot steam, the white-powdered faces of the workers dashing around … then adding to the mix, the sweet smell of fresh flour and egg … there is a bonus too. a lovely and cool pet cat of tim.
